Mercy! I like balls. I like meatballs, cheese balls and how could anyone forget those heavenly cake balls. But I have now found a new “ball” to add to my list. Breakfast balls. These balls are low carb, gluten-free and so good! After I make a batch, I wrap them up in three’s and freeze. It takes less than a minute to microwave and I have a breakfast that smells great, is fast, holds me over for a few hours and most importantly goes well with my on again, off again diet. Can’t beat that right? Wrong! Not only does it make enough to freeze for a quick grab and go breakfast, but they also make for a great appetizer to take to family gatherings, work related brunches, or church functions. This recipe also has the ability to be customized to suit your tastes buds as you can add different spices, cheeses and meat such as garlic, red-hot pepper flakes, Parmesan cheese or hot sausage. This recipe yields 48.
Ingredients:
2 lbs. pork sausage
1 lb. ground beef
3 eggs
2 tablespoons dried onion flakes
1/2 teaspoon black pepper
1/2 lb (8 ounces) sharp cheddar cheese, shredded
Directions:
Preheat oven to 375 degrees. While your oven is preheating, mix all of the ingredients together until thoroughly blended (it is best to use your hands or an electric mixer). Next, form into 1 to 1 1/2 inch balls and place on a cookie sheet or broiler pan (I suggest lining your baking sheet with parchment paper first). Bake for approximately 25 minutes.
Once they are cool, they can be sorted into individual zip-lock bags and frozen for a quick grab and go breakfast.

Wow I feel like I should try this. I love love love meatballs! Have never made them though. I am seriously thinking about doing this. Any kind of pork sausage right? Remove the casings?

Yes any sausage will do. I just went to my local grocery store and purchased the sausage they have there in their meat department. Nothing fancy will do just fine.

I can’t wait to make them. I’m always looking for good make-ahead breakfast recipes! My hubby leaves for work before 6am & (I’m embarrased to admit this) I don’t quite have the ‘get up & go’ that early in the morning to fix him a big breakfast. However, I want him to have something hearty & delicious. I think your breakfast balls will be a GREAT addition to the quick, on-the-go breakfasts I make for him. 🙂

I will! Both my Mom and my husband’s Mom are visiting and they haven’t let me cook anything (not complaining at all!), but I will definitely be trying these out after they leave 🙂 …or maybe I’ll give them the recipe and have them make it for me 🙂
Maybe on the weekend. I have a poopy cold and nausea has reared it’s ugly head again the past week so my appetite isn’t great.

I make giant batches of regular old meatballs and bag and freeze them, like you said. I’ll bet these would make an amazing sandwich, with some more cheese and maybe some salsa–but there goes the low carb. 🙂
