Who doesn’t love jalapeno poppers? Who doesn’t love quick and easy low carb recipes? THIS GIRL! My husband makes some really yummy jalapeno poppers with deer meat and so I decided to recreate them using chicken. This low carb chicken recipe is filled with a cream cheese, sharp cheddar cheese, and diced jalapeno mixture then wrapped in bacon and baked to perfection. In my opinion, this is a slam dunk if you are looking for a quick and easy low carb dinner on a busy weeknight Not to mention you can’t go wrong with cream cheese and bacon together in one recipe!
Low Carb Bacon Wrapped Jalapeno Popper Stuffed Chicken
Ingredients:
4 chicken breasts, pounded thin
3-4 jalapeno, diced (If you can also use 2 or 3 if you don’t like “hot”)
4-5 ounces cream cheese, room temperature
1 cup Sharp Cheddar Cheese, shredded
8 slices of bacon
Directions:
Preheat oven to 400 degrees. Pound the chicken flat and season with salt and pepper. Then mix together cream cheese, shredded cheese, and diced jalapeno peppers and spread on to the chicken. Roll up the chicken breasts, wrap each one with two slices of bacon and place in a 9×13 baking dish. Bake for 35-40 minutes or until thoroughly cooked.

You should! They were seriously sooo easy to make and I loved them! If you don’t like them too spicy then I would do just 2 or 3 jalapenos

Look at you, all low carb and stuff while I’m about to smash up a box of crackers to mix with five pounds of ground beef and make meatballs for the freezer. Meatballs. To go with carby pasta! Lol!
I made something like this once, sans jalapeños. My husband loved it, but me, not so much. It does sound good with venison, though!

It is really good with venison but I didn’t have any of that thawed out so I brought out the chicken. And no worries…that was ONE meal last week. The others consitested of all things carbs! LOL! I’m trying to build up a good recipe collection of low carb foods so that its not just sporadic low carb meals every now and then. I have a couple new ones to try this week. One of them is a low carb chicken Alfredo. My hubby is a bit skeptical on this one…as am I. How can you have that with no noodles? We shall see. If you don’t see it on the blog then you will know it sucked. lol!
