Cauliflower Supreme Pizza Casserole

If you want the taste of pizza but you are on a low carb/gluten-free diet, then this is seriously the recipe for you!  I guarantee this easy to make recipe that is packed full of flavor will be a regular in your weekly rotation as it has been kid tested and husband approved!

Low Carb Pizza Casserole



One large head of cauliflower–trimmed into small florets

1/2 Cup plus 2 Tbs. Parmesan Cheese–Grated, Divided

1 Tbs. plus 1 Tbs. Italian Seasoning–Divided

3 Gloves Garlic–Minced (If using minced garlic from a jar, simply use 1 1/2 tsp.)

3 Tbs. Olive Oil

Salt and Pepper to taste

1 Cup Mozzarella Cheese–Shredded, Divided (I used 2 cups)

1 Cup Spaghetti, Marinara, or Pizza Sauce (I used spaghetti)

4 slices of Canadian Bacon, cut into quarters

Pepperoni (amount depends on your preference)

1/2 Green Bell Pepper, Diced

1/2 Red Bell Pepper, Diced

1 oz Onion, Diced

10 Black olives, Sliced


Preheat your oven to 400 degrees.  In a large mixing bowl, combine cauliflower, 1/2 cup Parmesan cheese, 1 Tbs. Italian Seasoning, garlic, olive oil, salt and pepper.

Line in a single layer on a rimmed baking sheet and bake on the top rack for 30 minutes.

Once the cauliflower is done cooking, transfer it back to the mixing bowl.  In the mixing bowl, add 1/2 cup pizza sauce and 1/2 cup mozzarella cheese.  Toss until the ingredients are well combined and cauliflower is coated.

Next, transfer the cauliflower mixture to a 9×13 casserole dish and layer on the remaining sauce and mozzarella cheese.  Then top with Canadian bacon, pepperoni, bell peppers, onion and olives.  Finally, sprinkle the remaining 2 Tbs. Parmesan cheese and 1 tsp. Italian seasoning over the top.

Reduce oven temperature to 350 degrees and bake 30 minutes.

    • It really is delish! I was kinda thinking our three year old foster child would turn up her nose but she loved it!!! I was excited to have something tasty and healthier to add to our recipe list 😉
